When I received my allergy testing back from Green Circle Wellness, one of the saddest moments was learning that I could no longer have oats! Not only do I have a gluten intolerance, but also an oat allergy, which meant goodbye oatmeal, overnight oats, etc — my ultimate comfort food, especially on colder days.
When I asked for some additional breakfast recipe inspo from GCW, they gave me this cauliflower oats base, and from there, I’ve gone wild mix and matching variations of the cauliflower turned steel cut goodness.
Base:
1/2 cup cauliflower rice (I buy fresh from Whole Foods/Trader Joe’s)
1-1.5 cups almond milk and/or coconut milk
3 tbsp flax seed
Optional 1 scoop protein
After the base, top with fruit like wild blueberries, Strawberries, Bananas, Pears, or Dates + Cinnamon and/or coconut flakes. You can also make them savory and use avocado slices / plain almond based yogurt.
The trick is to cover the oats and let them soak and cook for 15 minutes, like steel cut oats. I’ve recently been mixing it up and making them as more of an “apple pie” flavor with cut up dates, apples, cinnamon, nutmeg, and even nuts in the pot. Feel free to add any nut butter/superfoods. I just eat lower fat when it comes to nuts lately, due to test results from Green Circle Wellness as I translate fats into energy more slowly. See my favorite variation below.
I hope you guys LOVE these as much as I do. This recipe truly had me once again recognize that cauliflower is the chameleon of vegetables. It can be anything — and always tastes good!
