Bun Undone Summer Chicken Salad
A light, ready-to-go snack or meal, made with a gluten free, soy free, dairy free, Non-GMO, and vegan alternative to mayonnaise, GoAvo spread.

Ingredients
  • 4 boneless, skinless chicken breasts
  • 1 tbsp extra virgin olive oil
  • 1/2cup raw walnuts
  • 1cup red grapes, cut into halves
  • 1/3cup celery, chopped
  • 1/3cup red onion, chopped
  • 1/4cup GoAvo Spread
  • 1tbsp fresh lemon juice
  • salt and pepper to taste
Instructions
  1. Drizzle 1 tbsp of extra virgin olive oil onto four boneless, skinless chicken breasts. Season with himalayan pink salt and ground black pepper
  2. Bake chicken in oven at 375 for about 25 minutes. If breasts are thicker, add more time
  3. Shred chicken thinly, if more cook time is desired, throw on stove top in sauce pan (no oil or sauce necessary)
  4. Place finished, sliced chicken into a bowl
  5. Cut grapes in half, and finely chop celery and red onion
  6. Add 1/2 cup walnuts to the mixture
  7. Add 1/4 cup GoAvo spread, followed by 1 tbsp of fresh lemon juice. Combine all ingredients evenly
  8. Add salt and pepper to taste if desired. Enjoy!
Recipe Notes

To save time, prep all add-ins while the chicken is baking in oven. If you have a crock pot, you may also cook and shred your chicken with that instead.
