In the summer time, I am constantly craving something fresh, light, easy, and often times, cold. After a PM workout or a long day of work, sometimes the microwave even seems like a hassle. Recently, I’ve had a serious craving for chicken salad, but not just any chicken salad. I wanted to create my own, free of mayo, different than the usual greek yogurt alternative, and packed with flavor and crunch. I am not a chef, nor am I a nutritionist. With that said, I am so excited to start bringing you into the kitchen with me, as being a foodie must qualify for something, right? 🙂 This introduces the first of many Bun Undone recipes, and I cannot wait for you to try.
This chicken salad is a perfect lunch, dinner, or even snack option. It can be enjoyed for up to three days and pairs great with sprouted grain toast or a wrap, lettuce of your choice, or even plain if you’re feeling wild! I was so beyond excited when I found this GoAvo spread at Plum Market. Personally, I am not a fan of greek yogurt, and I knew this recipe called for something equally as creamy and healthy, yet more flavorful. This spread is literally made with avocado, grapeseed oil, white wine vinegar, organic cane sugar (don’t worry, the label still reads 0g of sugar), sunflower lecithin, organic lemon juice and sea salt. I had a blast making this recipe and I hope that you enjoy it as much as I do. With crunch, creaminess, and a bit of citrus, this chicken salad is extremely satisfying and refreshing; a perfect recipe for the summer.

- 4 boneless, skinless chicken breasts
- 1 tbsp extra virgin olive oil
- 1/2 cup raw walnuts
- 1 cup red grapes, cut into halves
- 1/3 cup celery, chopped
- 1/3 cup red onion, chopped
- 1/4 cup GoAvo Spread
- 1 tbsp fresh lemon juice
- salt and pepper to taste
Ingredients

- Drizzle 1 tbsp of extra virgin olive oil onto four boneless, skinless chicken breasts. Season with himalayan pink salt and ground black pepper
- Bake chicken in oven at 375 for about 25 minutes. If breasts are thicker, add more time
- Shred chicken thinly, if more cook time is desired, throw on stove top in sauce pan (no oil or sauce necessary)
- Place finished, sliced chicken into a bowl
- Cut grapes in half, and finely chop celery and red onion
- Add 1/2 cup walnuts to the mixture
- Add 1/4 cup GoAvo spread, followed by 1 tbsp of fresh lemon juice. Combine all ingredients evenly
- Add salt and pepper to taste if desired. Enjoy!
To save time, prep all add-ins while the chicken is baking in oven. If you have a crock pot, you may also cook and shred your chicken with that instead.

I typically go to Trader Joe’s and Whole Foods, but happened to find this at a more gourmet grocer, Plum Market. It is SO good! If you aren’t able to find this or one of the alternatives, you could definitely whip up your own combo of avocado, lemon juice, grapeseed oil, white wine vinegar, and sea salt! Let me know what you think if you end up making it. 🙂
