Pumpkin Oat Chia Seed Pudding
The best fall breakfast, snack or even dessert. Friendly for anyone on-the-go!
Ingredients
  • 1 1/2cup Plain Silk Oat Yeah Oatmilk
  • 1/4cup chia seeds
  • dash to your liking cinnamon
  • dash to your liking pumpkin pie spice
  • 1 scoop collagenoptional for added protein benefits
  • 2pitted and soaked datesto sweeten
  • handful pumpkin seedsfor topping
  • handful coconut flakesfor topping
Instructions
  1. Place all ingredients in a blender (bowl if preferred) and mix thoroughly
  2. Place combination into mason jar or several mason jars to enjoy pre-portioned throughout the week.
  3. Let sit in the refrigerator for a couple of hours to completely thicken into pudding consistency
  4. Top with pumpkin seeds, coconut flakes, extra cinnamon and any desired topping of choice!
