Paleo Matcha Pancakes
A perfect twist on a classic! Love these earthy, yet sweet and antioxidant filled pancakes for a weekend brunch.
Ingredients
  • 1cup Bob’s Red Mill Paleo Baking Flour
  • 3/4tsp baking soda
  • 1/4tsp salt
  • 2 eggs
  • 1/3cup unsweetened almond milk
  • 1tbsp coconut oil
  • 2tbsp raw honey or pure maple syrup
  • 2tbsp ceremonial grade matcha
  • 1/2tsp vanilla extractOPTIONAL
Instructions
  1. Combine all ingredients and whisk together, in bowl or blender.
  2. Spray stove top with coconut oil, then cook slow and low. Flip until brown on the outside and gooey on the inside!
  3. Drizzle with more honey or maple syrup, and I loved mine topped with coconut flakes!
