Sick days are no fun, but they always make me crave the care I received as a child — which mainly consisted of soup, soda (for upset stomach), tea, and crackers! These days, that looks a lot more like soup, Spindrift (or kombucha) and gluten free Simple Mills crackers. Whichever you fancy, this homestyle and homemade soup totally did the trick. At first, I was sad I didn’t have chicken or bone broth stocked up to make some chicken noodle soup, BUT this recipe proves that you can improvise with what you have in your fridge and pantry, and the result will be just as good! This was also a perfect recipe for a snowy (April!!) day. I personally love how the chicken sausage spices spread throughout the soup, and the lentils create a thicker broth — yum!
Recipe makes about four servings, so store in your usually mason jar or tupperware to save for later, or even freeze for later (this was always my momma’s favorite trick).

- 1 tbsp olive oil extra virgin
- 5 cups organic vegetable broth
- 2 cups purified water
- 1 large handful kale (chopped)
- 2 chicken sausage links, sautéed in pan first I buy organic Italian kind from Trader Joe's
- 1 cup sweet potato ribbons
- 1 cup red lentils
- 1 cup chopped yellow onions
- 1 inch ginger, minced optional to aid in digestion
- 1/8 tsp coriander
- 1/8 tsp garlic powder or 1/2 clove
- olive oil spray for pan

- Add 1 cup chopped yellow onions, optional 1 inch ginger (minced) and 1 tbsp olive oil to pan. Sauté for 10 minutes on medium heat until browned.
- Simultaneously add chopped chicken sausage to separate pan, sprayed with olive oil spray, for 15 minutes until each side is perfectly browned and cooked through. Set aside until later.
- Add 5 cups vegetable broth, 2 cups water, chopped kale, sweet potato ribbons and lentils to soup pan. Cover with lid and turn to lower light.
- After 5 minutes, add chicken sausage and spices. Let simmer for another 20-25 minutes, stirring regualrly until consistency is thick. Since we aren't blending, you want the lentils to soak up the liquid and create a heartier, thicker soup consistency. Kale and sweet potato ribbons should be soft. Feel free to modify spices if desired, but please note: the chicken sausage spices (and salt) are soaked up by the soup!
- Serve as a side or a main dish for any meal.
Chicken sausage can be swapped for other proteins like beans, or chicken, or none at all (lentils provide plenty on their own)! This swap could change the flavor as well as make it vegetarian 😘
